Requirements
Every food establishment needs a person in charge who holds a Certified Food Manager (CFM) certificate, earned through a CFM training program accredited by the Texas Department of State Health Services (DSHS).
A certified food manager has to be on site at all times while the business is open, and the certificate must hang where customers can see it. These rules come from Food Code sections 2-101.11 and 2-102.12.
Passing the Certification Exam
To become certified, a candidate must pass a food manager exam that is approved by Texas DSHS or accredited under the ANSI-CFP program. The test can be taken through any accredited exam provider or training program.
Candidates who pass receive an official CFM certificate, which must be displayed in a spot that is easy for customers to notice. A certificate stays valid for five years.
